Why don't people cut down cinnamon trees first and then peel off all the bark from top to bottom? Instead, they start by peeling the lower half of the trunk. In fact, when the cinnamon tree is still alive, the sap continues to flow, making the bark soft and easy to peel off in large sheets. If the tree is cut down and not peeled immediately, the bark quickly sticks to the trunk, making it much harder to harvest. That's why people usually peel the bark within arm's reach first, then cut down the tree to peel the remaining bark. When cutting, they don't cut all the way to the ground but leave a portion of the trunk to allow the tree to sprout again and be harvested in a few years. There is a technique that involves leaving part of the bark intact to keep the tree alive and maintain nutrient flow, but it’s not very effective for cinnamon growers. Therefore, they typically choose to peel off all the bark to maximize the tree’s value.
