Kul er Chutney | Juju Berry Chutney
Prep time – 5 mins
Cook time – 20 mins
Serves - 4
Ingredients:-
• Ripe Juju Berry – 50 g
• White Mustard – 1 Tsp
• Tomatoes – 100 g (quartered)
• Oil – 2 Tbsp
• Salt – 1 Tsp
• Turmeric – 1 Tsp
• Sugar – 75 g
For the Toasted spice :-
• Fenugreek seeds – 1 Tsp
• Fennel seeds – 1 Tsp
• Dried red chilli – 1 no
• Bay Leaf – 1 no
• Panch phoran – 1 Tsp
Method:-
• Dry roast the spices on medium flame till fragrant. Once done, grind to a fine powder.
• Take the ripe juju berry and just submerge it with water. Bring to a boil and simmer for 5 mins.
• After boiling, split open the berries slightly
• Heat 2 Tbsp oil in a pan
• Add in the mustard and wait for them to crackle
• Add in the tomatoes. Cover and let cook for 10 mins
• After 5 mins, start breaking up the tomatoes
• Add in 1 Tsp salt. It helps drawing out the water faster
• Add in the turmeric and the berries. Mix well
• Add a little water and simmer
• Once the mixture becomes jammy, add in the sugar and cook for 5 mins
• Turn off the gas and add the toasted spice powder. Let infuse
• Serve chilled
