In this video, I’ll walk you through a super simple soup recipe that requires minimal ingredients, no fancy tools, and zero stress! Perfect for busy weeknights, meal prep, or those days when you just want something warm and homemade without the hassle :)

INGREDIENTS
4 burger buns (you can use any bread really)
3 medium carrots
6 small bell peppers (2 of 3 different colors if you can)
1 bunch of watercress
Salt
Black pepper
Garlic powder
Red pepper flakes (optional)
Thyme
2 bay leaves (optional)
2 tbs of olive oil
1 tbs of unsalted butter
1 cup of heavy cream
COOKING INSTRUCTIONS
1. Grab a bowl and break your bread into small pieces
2. Add 3 cups of water to the bread and set aside
3. Clean and cut your veggies (except the watercress) into cubes
4. Turn on your stove to slightly over medium
5. Add 2 tbs of olive oil to your pot and let it heat up for 2 minutes
6. Add your onion, stir, then let it cook for 2 minutes
7. Add your bell peppers and let cook for 2 minutes as well
8. Add 1 tbs of unsalted butter
9. Add your carrots and lower the heat to medium
10. Add your bread (including the water)
11. Add 5 cups of water
12. Add 1 tsp of salt, stir
13. Add 1 tsp of black pepper, stir
14. Add 1/2 tsp of garlic powder, stir and taste
15. Add some red pepper flakes (optional)
16. Add some thyme
17. Add 2 bay leaves (optional)
18. Let it cook with the lid on for 5 minutes on medium heat
19. Rinse and chop your watercress
20. Add your watercress, stir
21. Adjust the seasonings to your taste, stir, and let cook uncovered for 2 minutes
22. Add 1 cup of heavy cream, stir
23. Add 1 tbs of unsalted butter
24. Let it cook uncovered for 3 minutes on medium heat
25. Lower the heat and let it cook for 5 minutes on low heat
