In this plating practice, I tried to give more height to the dessert, as this is one of the most important plating techniques and concepts I recently realized and learned.
Components of this plated dessert: Ground cinnamon, pineapple coulis, banana cream tart (almond sablee shell and banana pastry cream), rum dark chocolate ganache, banana chips.
