LAO PAPAYA SALAD
1 green papaya, shredded
2 cloves of garlic
Thai chilis, as much or as little
1 tsp shrimp paste
2 TBSP frozen crab juice
Couple pieces of crab
2 palm sugar + 1 TBSP water (microwave for ~30 secs)
1 TBSP fish sauce
Juice from ½ lime
¼ cup tamarind concentrate
Long green beans, cut 1.5- 2 inch wide.
Cherry/ grape tomatoes, halves
Fried pork skin, for serving
1. Peel your green papaya and shred using a shredder or the chopping method (watch my video to get clarity)
2. In a pestle and mortar, pound together: 2 cloves of garlic, thai chilis and 1 tsp of shrimp paste. Pound until it turns into a paste
3. Add 2 TBSP of frozen shrimp juice and a couple of crab pieces. Carefully mix this/ smash lightly to bruise and slightly crack the shells
4. Melt 2 pieces of palm sugar with 1 TBSP of water. Microwave for ~30 seconds. Then add this to your pestle and mortar along with 1 TBSP fish sauce, the juices from half a lime and ¼ cup of tamarind concentrate. Carefully mix this.. taste test and adjust to preference.
5. Next, add long green beans and cherry tomatoes. Smash lightly to bruise them.
6. Then add as much or as little shredded green papaya. Pound and mix everything together.
7. Transfer to a serving tray and serve with fried pork skin and/ or vermicelli noodles.
