Semolina cupcakes made with buttermilk with addition of nuts, raisins and dried apricots come out remarkably tasty. They are quick and no fuss to cook. That’s a perfect dessert for your tea or coffee. Small size let take it with you to office or give to kids to school.

✅ Ingredients:
• 3 eggs
• sugar – 7,5 oz / 215 g
• 2-3% buttermilk – 1 cup / 250 ml
• semolina – 12 oz / 350 g
• any nuts – 2 oz / 50 g
• raisins – 3 oz / 100 g
• dried apricots – 3 oz / 100 g
• baking powder – 1 tsp
• butter – 3 oz / 100 g
• salt – 1 tsp
• vegetable oil – 1 tbsp
✅ You will need:
• deep bowl
• whisk
• muffin pan (in the video recipe 6-cup pan 28*19 cm used)
📙 Preparation:
1. In a deep bowl whisk 3 eggs, then add the sugar and salt and whisk well.
2. Add the melted butter, buttermilk, preferably fried nuts, raisins and chopped dried apricots into the bowl and stir.
3. Add the semolina and baking powder and stir.
4. Leave the batter for 10 minutes at room temperature.
5. Brush the muffin pan with vegetable oil and fill the cups with the batter 1 cm below the upper edges.
6. Preheat oven to 350°F / 180°C and bake the cakes for 30 minutes until golden.
7. Take out and check readiness with a wooden stick – pierce a muffin and see whether a stick comes out dry. If not, bake the muffins for another 3-5 minutes.
8. Cool the semolina and nut muffins, sprinkle with powdered sugar and serve to your tea or coffee.
