RECIPE:
8 Yukon Gold Potatoes (cut into half and then each half into fourths)
3 Carrots (cut into 2 inch pieces, cut in half and then in half again)
3 TBSP Aquafaba (liquid from a can of chickpeas)
1/2 TBSP Italian Seasoning
1 tsp garlic powder
1 tsp onion powder
1/2 tsp salt (or more for added taste)
Fresh Pepper (a few turns)
1. PREHEAT OVEN 400 DEGREES
2. Place cut up potatoes and carrots in large bowl, cover with water and let soak for 20 minutes.
3. Drain water out and pat dry with a towel or paper towels.
4. Pour 3 TBSP of Aquafaba over veggies, mix with hands to distribute aquafaba throughout veggies.
5. Sprinkle on all seasonings, gently mix with hands to distribute all seasoning throughout veggies.
6. Place veggies in a single layer on a parchment lined baking sheet.
7. Bake for 25 minutes.
8. Take out and use a spatula to turn veggies over and move around.
9. Bake for another 15-20 minutes.
10. Take out and enjoy!!! They are best fresh from the oven!
***Option to add onions in #2 I will definitely add onions next time!
