Hake Fish cooked in Tomato Sauce with Quinoa and Ripe Fried Plantain

INGREDIENTS:
FOR THE FISH & SAUCE
hake fish (cut into pieces)
tin of tomatoes
2 spring onions
1/2 red or white or yellow onion
1/2 red bell pepper
1 small red scotch bonnet pepper
2 tablespoons of fish seasoning
1/2 teaspoon of salt
1 bay leaf
3 pimento
3 tablespoons of olive oil
3 pegs of garlic
1/4 thumb size of ginger
1/2 shallot
10 splashes of Worcestershire Sauce
2 tablespoons of balsamic vinegar
FOR QUINOA
2 cups of quinoa
1/4 cup of boiled water
few slices of shallot
1/4 teaspoon of salt
1/4 teaspoon of powder garlic
FOR PLANTAIN
1 ripe plantain
sprinkle of salt
little bit of olive oil for frying
