Teresa shares her delicious recipe, ideal for a romantic date night or impressing special guests.
Ingredients
• 2 cups panko breadcrumbs
• Pinch of salt
• ½ teaspoon oregano or a few tablespoons chopped parsley
• 2 swordfish steaks (if too thick, lightly flatten between 2 sheets of baking paper using a mallet/meat tenderiser)
• Plain flour or cornflour (for dusting)
• 2 large eggs, beaten
• 60 ml olive oil (for frying)
• Lemon, to serve
Method
1. Prepare the breading station:
• Container 1: flour
• Container 2: beaten eggs
• Container 3: panko breadcrumbs mixed with parsley or dried oregano
2. Heat the olive oil in a large pan over medium heat.
3. Coat the fish:
• Dredge in flour, dip in egg, coat in breadcrumbs
• Repeat for all fish portions
4. Cook:
• Fry each side for 3 minutes until golden
5. Drain:
• Remove fish and place on paper towels to absorb excess oil
6. Serve:
• With lemon and fresh herb coleslaw
