Ingredients:
• 2 1/2 cups semolina
• 1/2 cup soft semolina
• 1 cup ghee or butter (soft butter at room temperature)
• 1 cup sugar
• 1/2 cup of yoghurt added to it 3/4 cup of water
• 1 tsp baking powder
• 1 1/2 tbsp sesame paste (tahini)
• 1/4 cup sliced peeled almonds
• 1 1/2 cup sugar syrup (kater)
Preparation:
• Place the semolina, the soft semolina and the baking powder in a deep bowl and stir.
• Add the ghee and sugar to the mixture of semolina and mix with hand until getting a mixture like sand.
• Leave the mixture 30 minutes to rest.
• Add the yoghurt mixed with water to the previous mixture and stir with a spoon.
• Paint the bottom and sides of the oven tray (size 35 cm x 25 cm) with tahini and for a round tray the diameter must be between 28 and 30 cm.
• Pour the mixture in the tray and cut the face of mixture by a knife into square and decorate the face with almonds.
• Place the tray in a preheated oven at 210°C for 30 to 45 minutes until it becomes brown.
• After 15 minutes, remove the tray and cut it again with a knife and then return it to the oven.
• Remove the tray from the oven and sprinkle it with kater.
• Leave it to cool and serve it.
Note: A smaller tray can be used for those who wish the namoura to be thicker.
