Arepas with Shredded Chicken & Cheese🇻🇪🫓
I grew up eating these almost every day, breakfast before school, late-night dinners, even after a long day. No matter what, my mom or my dad always had them ready for me and my sister🥰 @betterthanbouillon @thefeedfeed
Ingredients:
For the Arepas:
• 2 cups precooked white cornmeal (harina pan) @pan_us
• 2 1/2 cups warm water
• Salt to taste
To boil/cook the chicken:
• 2 chicken breasts
• 1 tbsp @betterthanbouillon chicken base
• 1/4 yellow onion, chopped in large pieces
• 1/4 red bell pepper, chopped in large pieces
• 2 garlic cloves
• 1 bay leaves
• 1 tsp whole peppercorns
• Reserve the chicken broth for later**
For the sauce:
• 1/2 red bell pepper, diced
• 1/2 yellow onion, diced
• 2 green onions, chopped
• 2 garlic cloves, minced
• 2 tbsp tomato paste
• 1 tsp @betterthanbouillon chicken base
• about 1 cup of reserved chicken broth
• Salt and pepper to taste if needed
To assemble:
• Shredded cheese, I used mild cheddar cheese
Instructions:
1. Place chicken breasts, onion, bell pepper, garlic, bay leave, whole peppercorns in a pot. Add water to fully cover.
2. Add 1 tablespoon of better than bouillon chicken base. Bring to a boil, then lower to a gentle simmer and cook for 20 minutes or until chicken is cooked through and tender.
3. Remove the chicken, but save the water for later!Shred the chicken, and set aside.
For the sauce:
1. Heat avocado oil in a pan and sauté the onion, bell pepper and green onions until soft.
2. Add garlic, tomato paste and slowly add the reserved chicken broth until creating a sauce. Add 1 tsp better than bouillon chicken base. Adjust seasonings if needed and add the shredded chicken. Add more chicken broth if needed.
For the arepas:
1. In a large bowl, add the cornmeal with salt, then add the water. Mix with your hands until smooth. Adjust the salt if needed. Divide into 5-6 balls, and flatten into disks.Cook on a hot skillet for 5-6 minutes per side until golden at medium heat.
Assemble🧀:
1. Slice arepas open like a pocket. Fill with warm shredded chicken, add shredded cheese and enjoy!
