Crispy Aloo Gobhi Deep Fry (Masala Tossed – Dhaba Style)
A simple yet addictive dry sabzi where perfectly deep-fried aloo and gobhi are tossed with bold dry spices and finished with hot oil for extra flavour and shine.
Ingredients
1 medium cauliflower, cut into medium florets
4 medium potatoes, cubed
Salt, to taste
½ tsp turmeric powder
1 tsp Kashmiri red chilli powder
Oil, for deep frying
For final masala toss
½ tsp black salt
½–1 tsp spicy red chilli powder (as per taste)
1 tsp coriander powder
1 tsp amchur (dry mango powder)
2–3 green chillies, slit
Few curry leaves
1–2 tbsp hot oil (from frying)
Method
Marinate cauliflower florets and potato cubes with salt, turmeric, and Kashmiri red chilli powder. Rest for 5 minutes.
Deep fry in hot oil in two separate batches until golden, crisp, and cooked through. Remove and drain excess oil.
Transfer hot fried aloo and gobhi to a large mixing bowl.
Add green chillies, curry leaves, black salt, spicy red chilli powder, coriander powder, and amchur.
Drizzle 1–2 tbsp hot oil over the top and toss everything well so the masala coats evenly without drying the sabzi.
Serve immediately while hot and crispy.
Serving Suggestions
Perfect with dal–chawal, simple roti, or as a starter with chai.
