My story continues…
I could say that I am blessed being able to learn how to make rolls in a short amount of time. Like I said from Ep23 typical training to become an actual sushi chef takes a long time. My ideal time spent working with rice was shortened by 10 folds because I was then doing 10 times the amount of rice and veggies than a normal 30-seater restaurant. No one else will help you out because all the other members of the galley are busy doing their own stuff. The pacing was just fast and continuous. After a month I had to learn how to make rolls at the least.
I remember my first couple of weeks doing rolls: my chef was pissed. Bigtime. I was lucky that I did not have to worry about food cost because I would have been fired for sure. My rolls were either too thin, too big, too loose or too tight. At some degree I was ashamed of myself because I only got 1 out of 10 rolls right. I had to eat whatever was “not up to standards” or to put it in the rubbish. I had to do a better job. I had to step up my game. I had to improve.
Took some time but I got there. It was quite difficult from the start also because my chef wasn’t the teaching type. He wasn’t impatient but he will rather do things by himself than delegate the tasks to others. I ended up not learning anything at the pace that I wanted so I had to learn by myself. I would test using spare rice and old fish. Instead of killing the old fish straight away I would keep it to continue practicing.
My chef had to go home because his contract ended. I was the only one left to run the place. At first I was scared because I knew that I wasn’t qualified. I later stepped up to the plate and things went well eventually. I had to face the reality that I will have to learn and practice more to get it right. I had that opportunity when I came back on 2016 in the same ship. I ran the place and the rest is history.
