Soup Maker Recipe: Jerk Chicken and Sweet Potato Soup (in a Ninja Soup Maker)

2 to 3 boneless chicken thighs*
1 x 400g tin of chopped tomatoes or passata
1 onion, chopped
100 g-200g sweet potato, peeled +chopped
1 sweet red pepper, chopped
1 red chilli, chopped (optional)
1 tbsp jerk seasoning
1 chicken or vegetable stock pot/cube with hot water up to the line

Instructions
1. Add all the ingredients to the soup maker jug and top up with hot water to the line.
2. Stir everything together until it is well combined.
3. Set the soup maker off on chunky. At the end of the soup maker cycle partially blend it, or, if you prefer, leave it chunky.

Notes
*you can use raw chicken (breast or boneless chicken thighs) in a Ninja soup maker, but you will need to use cooked chicken in other soup maker models.
