Moogacho Ros | Goan Sprouted Moong / Mung Curry | Quick & Easy Lunch Box Recipe
Ingredients:
} 1/2 Cup Moong
} 1 Cup Freshly Grated Coconut
} 3-4 Red Dried Chillies
} 1/2 tspn Mustard Seeds
} 2 pinches Hing
} 1 spring of Curry Leaves
} 1 Green Chilli
} 1 Medium Size Onion (Finely Chopped)
} 1/4 tspn Turmeric Powder
} 1 tblspn Coriander Seeds
} 5-6 Black Pepper Corns
} 1-2 tblspns Ghee
} Marbles Sized Tamrind
} 1 tspn Jaggery
} Salt
} Fresh Coriander to Garnish
Imp: Please skip the raw onion which was added to the grinder, it got added by mistake which I removed before grinding.
Method:
} Sprout 1/2 Cup Moong & Wash the sprouted Moong once or twice
} Dry Roast Red Chillies, coriander seeds, black pepper corns till they turn aromatic.
} To the ghee, add mustard seeds, hing, curry leaves, chopped onion and sauté until onions turn soft.
} Add sprouted moong, slit green chilli, salt, water, cover & let the moong cook.
} Grind coconut, roasted ingredients, turmeric powder, Tamrind with some water.
} Add the ground masala to the cooked moong, add water, salt, jaggery, cover & let it simmer for 5-7 minutes.
} Garnish with fresh coriander & enjoy with hot rice.
