Udupi style Idli Sambar❤️
This is the no onion and no garlic sambar recipe as Udupi cuisine contains no onion and garlic. The freshly ground masala made with a few spices and fresh coconut is what makes it more delicious and it is the main reason this sambar is prominent. Udupi cuisine is strictly vegetarian and Udupi sambar is one of the main dish that is recognized all over India. It was spicy, tangy and sweet. Do try it with idli, vada and Mysore masala dosa.
👉Ingredients for sambar masala:
Byadgi chillies - 10
Coriander seeds - 1 tbsp
Urad dal - 1 tsp
Chana dal - 1 tbsp
Fenugreek seeds - 1/2 tsp
Cumin seeds - 1 tsp
Cinnamon- 1 stick (whole)
Black pepper - 1 tsp
Fresh coconut - 1 cup (grated)
👉Roast all the spices until golden and aromatic and turn off the heat. Add coconut and let it cool down. Blend everything together into smooth paste.
👉Ingredients for making sambar:
Boiled toor dal - 2 cups
Tamarind - large lemon sized
Brinjal - 2
Pumpkin - 1/4 piece
Green chillies - 4
Tomatoes - 2
Drumstick - 1
Salt as per taste
Turmeric powder - 1 tsp
Coriander leaves as required
Jaggery (adjust how you like)
👉Ingredients for tempering:
Coconut oil - 3 tbsp
Mustard seeds - 1 tsp
Urad dal - 1 tsp
Curry leaves - 2 sprigs
Asafoetida - 1/4 tsp
Dry red chillies - 3
👉Recipe Process:
Add tamarind juice, vegetables, water, jaggery, salt and turmeric powder in a boiling pot. Cook vegetables properly. After vegetables cooked, add ground sambar masala and boiled toor dal. Cook for further 5 minutes. Add coriander leaves and tempering as well. Combine well and serve it with hot idli, Mysore masala dosa or hot steamed rice.
