Try this eggless version of a holiday classic! It's so good you should probably make a double batch.
Ingredients:
2 cups cashew milk
1/2 cup full fat coconut milk
1/3 cup cashews, soaked
4-6 dates
1 tsp vanilla extract
1 tsp freshly grated nutmeg
pinch of cinnamon
pinch of ground cloves
pinch of salt
Combine everything in a high speed blender. Blend until smooth and creamy. Serve immediately or with alcohol of choice for some extra fuuun!
Helpful tips:
To help the dates blend smoothly, soak them in warm water 10-15 minutes before you make the egg nog.
To soften the cashews, bring a small pot of water to a boil, put cashews in, turn heat off, cover pot and soak for 45 minutes to an hour. You can also soak them overnight in the fridge.
I used unsweetened vanilla cashew milk, but feel free to use sweetened if you like things on the sweeter side.
