Ingredients
• 1 kg fresh cassava (muhogo), peeled
• Water (for boiling)
• Salt (to taste)
• Cooking oil (for deep frying)
• Optional: garlic powder, chili powder, black pepper
Instructions
1. Peel the cassava and cut it into medium-sized chunks or sticks.
2. Wash thoroughly, then boil in salted water for 15–20 minutes until just tender (not mushy).
3. Drain the water completely and let the cassava cool slightly.
4. Heat cooking oil in a deep pan over medium-high heat.
5. Fry the cassava in batches until golden brown and crispy on the outside.
6. Remove and place on paper towels to absorb excess oil.
7. Sprinkle with extra salt or spices if desired.
8. Serve hot with kachumbari, chili sauce, or coconut chutney.
