Apple Pie with a Slice of Cheese Ice Cream
Prep Time: 40 minutes
Chill Time: 25 minutes + several hours in the freezer
Makes: 8 servings
Ingredients:
(For the ice cream base)
1 1/3 cups sugar
1/4 cup cornstarch
3/4 tsp kosher salt
2 1/2 cup whole milk
1 cup heavy cream
1 tsp vanilla extract
(For the apple pie filling)
2 Granny Smith apples, peeled and cored, 1/4” dice
1/4 cup unsalted butter
1 oz brandy
2 T heavy cream
1/4 cup dark brown sugar
1/2 tsp cinnamon
1/2 tsp kosher salt
(For the cheese swirl)
1/2 cup shredded sharp cheddar cheese
2 tsp cornstarch
1 cup heavy cream
1/2 tsp kosher salt
Preparation:
(Ice cream base)
Mix the cornstarch with 1/3 cup milk to form a slurry and set aside.
In a saucier or large saucepan, whisk together 1 1/3 cups milk, sugar, salt, and cornstarch slurry.
Bring to a simmer over medium heat, stirring often, then simmer for 1 minute.
Transfer to a large bowl, preferably metal, and whisk in the remaining 3/4 cup + 1 T milk, 1 cup cream and 1 tsp vanilla.
Refrigerate, covered, or chill in an ice bath until the mixture is around 40 degrees F.
(For the apple pie filling)
In a large, non-stick skillet, melt the butter until foamy, then add the apples and sauté until they begin to soften and caramelize.
Add the brandy and flambé, one minute.
Add the brown sugar, cinnamon and salt and cook until mixture is thick and bubbly, then stir in the 2 T cream and refrigerate, covered, until chilled.
(For the cheese swirl)
In a mixing bowl, toss together the cheddar and cornstarch.
Heat the cream over medium heat in a saucepan until it is barely simmering. Lower the heat to low and stir in the cheese mixture, one handful at a time, letting each handful melt and incorporate before you add the next, until all cheese is incorporated into a smooth sauce. Season with salt and set aside, covered, until it reaches room temperature.

Add the ice cream base to an ice cream machine and churn according to your machine’s instructions.
When the ice cream is a few minutes from finishing: add a scoop of apple pie filling, followed by a scoop of cheese sauce and continue to alternate until everything is swirled in.
Serve immediately if you like soft-serve, or place in an air-tight container (preferably pre-chilled) in the freezer for a few hours to harden up.
