Well, it works just like any other autoresponder. Clickfunnels, just lets you choose which SMTP you wanna use, where others don't.

SMTP is the courier of your emails. It what sends your emails to your customers/leads. Very similar to USPS. You put a stamp on your mail. USPS takes it and delivers it to it's destination. That's what an SMTP is.
