How to make Anko(sweet bean paste)
◎The relationship between azuki beans and sugar is usually one-to-one, which makes it a little sweeter.
◎Please cook the azuki beans without soaking them in water before cooking.
◎When making azuki bean paste in a home pot, it takes about 1 hour to cook beans and about 1 hour to cook red bean paste. It depends on the amount of azuki beans and the size of the pot.
1. Wash the azuki beans well with running water
2. Put the washed azuki beans in a pan, add water to cover about 2cm above the azuki beans, and heat over high heat.
When it comes to a boil and the azuki beans come to the surface, put some water in.
Repeat these steps 3-4 times.
3. If the red beans are swollen round, discard the broth while adding sink water.
Take the red beans in a colander and wash them with water.
Put the azuki beans back in the pan, add a little water and simmer slowly over medium heat.
When the amount of water decreases on the way, simmer with water, and finally simmer over low heat.
4.When it becomes soft enough to be crushed by pressing it with your finger, adjust the amount of broth so that the beans cover the broth.
5.Add the required amount of sugar and water and cook over medium heat.
When it comes to a little boil down, boil it down slowly with a spatula.
6.As a guide, if the traces of mixing with a spatula remain firmly on the bottom of the pot, it will be completed.
