This is a Turkish cake (Spinach cake) that You cannot tell it’s spinach, so don’t tell your guests or kids the secret ingredient until after they eat it…they will be amazed! Sometimes the green is a richer and darker in colour and sometimes it is lighter, it does not affect the taste of the cake. The cake is soft, moist, milky that you can't stop eating it again and again.
It’s a great way to get your kids to eat spinach, without them even knowing! Just ask who wants some green cake?

INGREDIENTS :
FOR THE CAKE -
Spinach - 2 handful
Water - to cook spinach
Whole egg - 3 nos
Sugar - 3/4 cup
Vanilla essence - 1 tspn
All purpose flour - 1 cup
Baking powder - 1 tspn
Salt - 1/4 tspn
Any vegetable Oli - 1/4 cup
FOR THE MILK MIXTURE TO SOAK CAKE -
Milk - 1 cup
Whipping cream or fresh cream - 1/2 cup
Condensed milk - 1/2 cup
METHOD OF PREPARATION:
(Baking time 180 degree (30 min) or until cake is done according to your oven.
Pan size - 7.5 inch, 8 inch or 8.5 inch. Here I have taken 8.5 inch pan).
Cook washed and cleaned spinach with enough water or you can cook by steaming until it was done (it may take 5 - 7 min). Strain water and cool them and make a smooth spinach paste by blending. In a bowl mix flour, baking powder and salt. Keep it aside. In a large bowl break 3 medium size egg. To this add sugar and vanilla essence. Beat them in a high speed with an egg beater until fluffy or ribbon consistency. To this add oil and beat in a very low speed for a second. To this add the flour mixture in batches and mix slowly with a spatula. Finally add spinach paste and mix well. Grease a cake pan. Put a parchment paper at the bottom and dust with flour at the side. Pour the mixture to this. Tap well to remove air bubble. Bake in a oven or as shown in the video.
Meanwhile preparing a milk mixture to soak the cake. Mix milk, cream and condensed milk together. After the cake was done cool them slightly, remove the parchment paper. Pour the milk mixture over the cake. Top up with some whipped cream if needed. Refrigerate the cake over night for a better taste.
