Naturally Fermented Apple Soda | Homemade Appy fizz | Probiotic Drink
Ingredients
2 apples
Palm sugar (to taste)
1 cinnamon stick
1 litre water (boiled and cooled)
Method
Gently rinse the apples, deseed them, and cut into pieces.
Grind the apple pieces, palm sugar, and ¼ cup water into a smooth paste.
Transfer the ground paste to a glass bowl. Add the cinnamon stick and the remaining water.
Mix well, cover loosely, and let it ferment for 2 days at room or kitchen temperature.
After two days, you will notice tiny air bubbles. Ensure there is no fungus or mold.
Strain the liquid using a clean cloth.
Pour the filtered juice into a flip-top bottle, leaving some headspace for carbon dioxide to form.
Let it ferment for 1 to 1½ days. Check the bottle once—if it feels very tight, gently burp the bottle.
Refrigerate well, then open carefully and enjoy!
Do not over-ferment, as excess pressure can cause the bottle to burst.
For safe opening, always chill the bottle before opening. This reduces fizz and prevents spillage.

This is a traditional wild-fermented apple soda made without any starter culture. Fermentation depends on natural yeast, so timing may vary. The taste should be mildly sweet, lightly tangy, and fizzy. Discard if you notice mold or an unpleasant smell.
