Ingredients:
For Thecha (Spicy Chutney)
10 garlic cloves
3 green chilies (adjust as per taste)
2 tbsp peanuts
½ tsp cumin seeds
½ cup fresh coriander leaves (including stems for extra flavor)
½ tsp salt
Juice of ½ lemon
For Paneer Coating
200g paneer (cut into thick cubes)
1 tbsp oil (for pan-frying)
For Yogurt Dip
½ cup hung curd
¼ tsp roasted cumin powder
3 garlic cloves (finely chopped)
1 tbsp finely chopped coriander
1 tbsp finely chopped mint leaves
½ tsp salt
For Spiced Onions
1 onion (sliced into rings)
½ tsp chaat masala
½ tsp Kashmiri red chili powder
Juice of ½ lemon
Process:
Step 1: Making Thecha (Spicy Garlic Chutney)
Heat a dry pan (without oil) on low flame and add garlic cloves, green chilies, peanuts, and cumin seeds.
Dry roast for about 2 minutes until fragrant.
Turn off the heat and let it cool slightly.
Once cooled, coarsely crush the mixture using a mortar & pestle or grinder.
Add fresh coriander leaves (including stems) and continue crushing until it forms a rough paste.
Add salt and lemon juice, mix well, and set aside.
Step 2: Preparing the Paneer
Cut paneer into thick cubes (avoid thin pieces as they may break while cooking).
Evenly coat each paneer piece with the prepared thecha mixture, ensuring every side is well covered.
Step 3: Pan-Frying the Paneer
Heat oil in a pan on medium flame.
Place the coated paneer cubes in the pan and pan-fry until golden brown on both sides.
Make sure to also cook the sides by gently tilting the pieces.
Once golden and crispy, remove from heat.
Step 4: Making the Creamy Yogurt Dip
In a bowl, whisk hung curd until smooth and creamy.
Add roasted cumin powder, chopped garlic, coriander, mint, and salt.
Mix well and set aside.
Step 5: Preparing Spiced Onions
Take the sliced onions in a bowl.
Sprinkle chaat masala, Kashmiri red chili powder, and lemon juice.
Mix well to coat the onions evenly.
Step 6: Assembling & Serving
Place spiced onions on a plate.
Top with the crispy, golden Paneer Thecha.
Sprinkle some chaat masala for extra flavor.
Serve hot with the creamy yogurt dip on the side.
