🥕✨ Carrot Gulab Jamun with Rabri ✨🥕
A royal twist to the classic dessert! Soft, melt-in-the-mouth carrot gulab jamuns soaked in rich, creamy rabri – perfect for festivals, guests, or when you’re craving something indulgent 💛

📝 Ingredients
For Carrot Gulab Jamun:
• 2 medium Carrots (washed, peeled & chopped)
• ½ cup Sugar (adjust to taste)
• 1 cup Milk (½ + ½ cup)
• ½ cup Suji (Semolina)
• 2–3 tbsp Ghee
• ½ tsp Elaichi (Cardamom) Powder
For Rabri:
• 1 litre Milk
• 3–4 tbsp Sugar (as per taste)
• 3–4 tbsp Milkmaid (Condensed Milk)
• Few strands Kesar (Saffron)
• 1 tbsp Custard Powder
• 2 tbsp Milk (to mix custard powder)
For Garnish:
• Chopped Pista

👩🍳 Method
🥕 Step 1: Prepare the Carrot Mixture
1. Add chopped carrots to a mixer.
2. Add sugar and ½ cup milk.
3. Blend into a slightly coarse paste (not completely smooth).

🔥 Step 2: Cook the Gulab Jamun Base
1. Heat 2 tbsp ghee in a kadhai.
2. Add half of the carrot paste.
3. Add remaining ½ cup milk and ½ cup suji.
4. Mix continuously on medium flame.
👉 Cook until:
• The mixture thickens.
• Moisture reduces.
• Carrot color deepens slightly.
• The mixture leaves the sides of the pan.
5. Add cardamom powder and ½ tsp ghee.
6. Mix well and cook for 2–3 minutes.
7. Turn off the flame and let the mixture cool completely.

🥛 Step 3: Prepare the Rabri
1. In a kadhai, add 1 litre milk and bring it to a boil.
2. Add sugar and milkmaid.
3. Add saffron strands.
4. Simmer on low flame for 5–6 minutes.
5. Mix custard powder with 2 tbsp milk (no lumps).
6. Add this mixture to the boiling milk.
7. Stir continuously until:
• Milk reduces to half.
• Rabri becomes thick and creamy.
Turn off the flame and let it cool slightly.

🍡 Step 4: Shape & Assemble
1. Once the carrot mixture is cool, grease your hands with ghee.
2. Make small smooth balls (like mini gulab jamuns).
3. Gently drop them into warm rabri.
4. Let them soak for at least 30 minutes.

Sprinkle chopped pista on top.
Serve warm or chilled – both taste heavenly! 😍
