Soy Oat Waffles
1 c soaked soybeans
1/4 c raw cashews OR sunflower seeds
2 c water
2 c rolled oats
1 tsp salt
Blend soybeans, nuts/seeds, and 1 c water. Add remaining ingredients and blend well. Let stand 5-10 minutes while waddle iron is preheating. Pour into sprayed waffle iron. Cook 7-10 minutes.

Gluten free Blueberry Pancakes
6 c gluten free rolled oats, blended into flour
6 c water
6 whole almonds
6 Tbsp flax seed
1 Tbsp salt
3 c blueberries
Blend water, almonds, and flax seed.
Mix all ingredients with whisk. Let sit 5 minutes before cooking on griddle with a 1/2 c measuring cup.

Fruit Topping
5 cups frozen fruit
1/4 c maple syrup
1/4 cup arrowroot
Combine fruit, maple syrup, and cornstarch in a pan and slowly bring to a boil, stirring continuously until it begins to thicken.

Vegan butter
2 1/2 c coconut oil (refined)
1 1/2 c olive oil or avocado oil
2 Tbsp liquid lecithin
2 c hot water
2 1/2 Tbsp salt
Mix water and salt. Whisk.
Put coconut oil, olive oil, and liquid lecithin in a blender. Turn on the blender for about 1 minute until the 3 ingredients are creamy, then pour in the salt water while the blender is still running and continue blending for another 30 seconds to 1 minute.
Let this sit in your blender for a couple of minutes, then pour into small containers. I used 7 (8 oz) jelly jars. Freeze extra jars and pull out when needed.
If using a Vitamix, use low-variable up to around number 7.
