🍋Lemon cheong is a no-cook Korean syrup made by layering lemon slices with sugar and letting time do the work. After a week, you get a bright, citrusy syrup that’s full of flavor. Mix it into cocktails, mocktails, tea, or sparkling water. Drizzle it over chia pudding, yogurt, or use it in marinades and dipping sauces. It’s an easy, delicious way to preserve fresh lemons and keep that sunny citrus flavor ready anytime.
🍋Lemon Cheong
• Lemons, preferably organic
• Sugar, equal weight to lemons
• Kosher or coarse sea salt, 2 Tbsps
1. Rinse and drain lemons. In a bowl, add lemons, salt, and 1/4 cup water. Scrub each lemon for 1 minute. Rinse and drain twice.
2. Dry lemons thoroughly with a clean towel.
3. Cut off the ends and thinly slice the lemons.
4. Remove all seeds.
5. Weigh the lemons and measure an equal weight of sugar. (Example: 20 oz. lemons = 20 oz. sugar.)
6. In a clean jar, layer lemon slices and sugar, ending with a layer of sugar on top.
7. Seal the jar and refrigerate for 7–10 days.
8. Turn the jar daily to help the sugar dissolve and coat all the slices. You can also stir and press gently with a clean utensil.
9. After 7–10 days, the cheong is ready. Store in the fridge for 3–6 months. It will slowly ferment and may become a little boozy.
