These Beef & Sweet Potato Meal-Prep Bowls are my go-to when I need a filling, high-protein dinner that also works for busy-week lunches. Roasted sweet potatoes, seasoned ground beef, black beans, cottage cheese, avocado, and cheddar come together fast, then a drizzle of hot honey brings the sweet heat that makes it hard to stop eating.
What I cover in the video:
Roast diced red sweet potatoes at 375°F with avocado oil, kosher salt, cumin, garlic powder, onion powder, and paprika (25 to 30 minutes, flip halfway). Brown 1 lb ground beef, drain, then season with all-purpose seasoned salt. Build your bowls with black beans, cottage cheese, avocado, cheddar, and hot honey right before serving. Pack into containers, and you’ve got meals ready all week. Add green onions or cilantro for extra pop.
