Finnish Salmon Soup Recipe
Finnish Salmon Soup, or Lohikeitto, is a simple Nordic Salmon Soup meal, ready in 30 minutes. The chunks of salmon the fresh dill and the light cream broth make this Soup very delicious and super tasty.
Ingredients
• 500-600gr. skin-on salmon filet
• 50gr. unsalted butter
• 2 small leek, sliced(white and light green parts only)
• 1,20I fish broth (you can also use fish stock)
• 450gr.potatoes, peeled and diced
• 1 large carrot, diced
• 10g fresh dill for garnish, fine chopped
• 250ml heavy cream
• salt and pepper
