INGREDIENTS:
150 g Vegan chow mein noodles
¼ Cup water
½ Vegetable bouillon cube
2 Tbsp dark soy sauce
1 & ½ Tbsp toasted sesame oil
1 Tsp rice vinegar
2 Tsp Maple syrup
1 Tsp sriracha
2 Tsp cornstarch
1 small carrot julienned
½ Red bell pepper sliced
½ Cup chopped broccoli
1 Tbsp cooking oil
1 Medium sliced onion
3-4 Cloves of finely chopped garlic
Some chopped green onions for garnishing

Instructions:
Prepare the Sauce
In a bowl, add water, vegetable bouillon cube, dark soy sauce, sesame oil, rice vinegar, maple syrup, sriracha, and cornstarch.
Mix very well until the cornstarch is fully dissolved. Set aside.
Cook the Aromatics
Heat cooking oil in a wok or pan over medium heat.
Add chopped garlic and sauté until fragrant (about 30 seconds).
Cook the Vegetables
Add onion, carrot, red bell pepper, and broccoli.
Stir-fry for 2–3 minutes until vegetables are slightly softened but still crunchy.
Add Noodles & Sauce
Add the cooked noodles to the pan.
Pour in the prepared sauce and toss well to coat everything evenly.
Final Cook
Cook for another 2–3 minutes, stirring continuously, until the sauce thickens and noodles are glossy.
Garnish & Serve
Garnish with chopped green onions and serve hot.
