Today's Recipe
Keto lemon rice

Ingredients
500 gm Grated Cauliflower
1/2 Lemon
2 tsp Ghee
1/2 tsp Mustard Seeds
1 tsp Chopped Ginger
50gm Peanuts
10 Curry Leaves
1/4 tsp Hing
1/2 Green Chili (Chopped)
1/2 tsp Turmeric Powder
Salt to taste
Coriander leaves for garnish


Preparation:
1. Prep the cauliflower rice by either manually grating the cauliflower, or using the food processor
2. Place a kadai on medium-high heat, add ghee and mustard seeds. When the mustard seeds begin to splutter add peanuts, turmeric powder, ginger, green chilli, curry leaves and continue frying.
2. Add cauliflower rice, salt and roast thoroughly on high heat for a few seconds mixing well.
3. Add a little water and cover and cook for 5-7 min.
4. Add lemon juice at the end, garnish with coriander leaves and mix well.
Serve hot.
