A traditional Turkish breakfast, known as Kahvaltı, is a legendary feast that emphasizes variety, freshness, and community. The word literally translates to "before coffee," reflecting the ritual of eating a substantial meal before enjoying the day's first cup of Turkish coffee.
The Essential Components
A typical spread, often served as a serpme kahvaltı (breakfast spread), includes several small plates designed for sharing.
Breads and Pastries: Simit (a sesame-crusted bread ring) is the star. Other staples include Pide (flatbread), Poğaça (stuffed rolls), and Börek (flaky pastry filled with cheese, spinach, or meat).
Cheese and Olives: Expect a variety, primarily Beyaz Peynir (white sheep's milk cheese similar to feta) and Kaşar (a yellow semi-hard cheese). Both green and black olives are essential, often drizzled with olive oil and herbs.
Fresh Produce: Sliced tomatoes and cucumbers are mandatory, usually seasoned with salt, olive oil, and sometimes fresh herbs like parsley or dill.
Eggs: The most famous egg dish is Menemen—scrambled eggs cooked with tomatoes, green peppers, and spices. Another favorite is Sucuklu Yumurta, which features fried eggs with Sucuk, a spicy, cured beef sausage.
Sweet Spreads: A luxurious treat is Bal Kaymak (thick clotted cream served with honey). Tahin Pekmez (tahini mixed with grape molasses) and various fruit preserves like sour cherry or apricot are also standard.
