Our dinner last night plus 6 extra servings to freeze and enjoy later. Remember to cook the chicken only until it achieves 165°F (as verified with a digital thermometer). Ingredients are listed below -- please watch the video for instructions.
Here are the Ingredients I used for the Curried Chicken:
4 chicken breasts, halved
Curry powder
Coconut oil for sautéing
1 large onion
A generous pinch of salt
2 (13.5 ounce) cans coconut milk (full fat for best flavor)
1 generous tablespoon cornstarch, for thickening the sauce
Garnish: chopped cilantro
