Follow our simple recipes below to make some yummy ginger breads, poppyseed mini cakes, divine carroty truffles and super tasty spiced hot chocolate.

"Poppyseed mini cakes, makes 6
500g poppyseed canned mix
100g almonds chopped
2 whites, 1 yolk
1 small mushy banana
1 tbs of plain flour
Mix together poppyseed, almonds with 1 tbs of flour. Next mix together egg yolk with banana and whip egg whites in the third bowl.
With a spatula combine all ingredients, fold in the egg whites last.
Pour the batter into six muffin moulds.
Bake in 170 C for 30 min
*Decorate
100g double cream
3 tbsp sour cream
2 tbsp icing sugar
Zest of half orange
Whip double cream with sugar and zest to soft peak. Fold in sour cream slowly.
Decorate the cakes by spreading 1-2 spoons of cream on top of each one, then putting a big strawberry in the middle.
Make bunny ears from a black icing and stick them on top, so the strawberry stays in between.
Stack two cakes and spread cream between them if your moulds are big.

Buckwheat Honey Gingerbread cookies
250g plain flour
1 tsp bicarbonate of soda
1 tsp cinnamon powder
2 tsp gingerbread spice
70g butter
100g buckwheat honey
1 egg, 1 egg yolk
1 tsp yogurt
Orange zest
In a small saucepan melt together butter with honey. Set aside and when cool enough, add yogurt, egg and yolk. Mix together all the dry ingredients and slowly add the wet ones to the mix. If your dough is too sticky to roll, wrap it in cling film and leave in a fridge for 20 minutes. Roll to 5mm and cut into desired shapes.
Put the cookies on a tray lined with parchment paper and bake in 160 C for 10 min.
*Decoration
Whilst cookies are baking make the icing. Juice half a lemon with as much of icing sugar as it needs to make a ‘brushable’ icing.
When the cookies cool down a little bit, brush the icing over and decorate with edible stars, more icing or glitter.

Prune and carrot chocolate truffles
100 g carrot grated
100g soft prunes / madjool dates
3 tbsp peanut butter
2 tbsp cacao powder
30 g walnuts chopped
Squeeze the juice out of carrots, they should be as dry as possible. Mix all ingredients using your hands. Roll into 10-13 balls and leave them on a lined tray to set in a fridge for around 30 minutes. When hard enough, roll them again quickly.
*Decorate
150 g dark chocolate melted
One by one, deep each ball in melted chocolate and put back on a tray. Sprinkle over your favourite decorations.

Spiced Hot Chocolate
300 ml whole milk
150 g dark chocolate
2 tbsp honey
1 cinnamon stick
2 cardamom pods
Put all the ingredients in a small saucepan and heat up gently till the chocolate has melted. Stir it constantly with a spatula – to avoid the chocolate sticking to the bottom of the pan. Strain and add the honey.
*Decorate
Serve your chocolate with whipped cream and marshmallows!
