Tennessee Prune Cake with Buttermilk Glaze

Cake
25 prunes chopped, about 7 oz
1 cup buttermilk
1 cup oil, I used vegetable
1 ½ cups white sugar
3 eggs
2 cups all purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon cinnamon
1 teaspoon ground cloves
1 teaspoon allspice
1 teaspoon nutmeg
1 teaspoon vanilla
Buttermilk Glaze
½ cup buttermilk
2 tablespoons dark corn syrup
¾ cup sugar
½ teaspoon baking soda
6 tablespoons butter
1 teaspoon vanilla
Do not use a mixer for this cake.
Prep a 13” x 9 “ pan by lining it with parchment paper. Pre heat oven to 325 degrees
.
In bowl 1 - Chop the prunes and stir in the buttermilk.
In bowl 2 - mix together eggs, oil, sugar and vanilla.
In bowl 3 - mix flour, soda, and spices.
Stir together the prune mixture with the eg mixture. Stir in the dry ingredients.
Pur into the pan and bake for 45-50 minutes until done.
While the cake is cooking, prepare the glaze. Mix glaze ingredients in a saucepan and bring to a boil. Stirring constantly.
When the cake is done, poke holes into the top of the cake with a skewer. Drizzle hot glaze over cake. Allow cake to cool before serving
