This is an old school favorite that so many people have great memories of eating. Call it comfort food or peasant food, but whatever you call it you're going to love it. Here's how to make the best escarole and beans!
Ingredients
1 head of escarole, cleaned and chopped into 3 inch pieces
2 tablespoons of olive oil
3 cloves of garlic chopped
15 oz. can of cannellini beans
1 cup of chicken broth
Salt
Black pepper
Dried peperoncino piccante di Calabria
Grated Romano cheese
Instructions
-Heat oil in a large saute pan over medium to high heat.
-Add garlic and saute until fragrant.
-Add beans and season with salt, pepper and Calabrian chili
-Cook beans for about 5 minutes.
-Add escarole and season again with salt and pepper. Allow escarole to wilt. Add escarole in batches if necessary if pan doesn’t have room for all of it at once.
-Add chicken broth.
-Allow to simmer for 30 minutes.
-Add grated pecorino Romano cheese and stir into pan.
-Serve and eat!
