Описание: In today’s video, I’m sharing a wholesome, low-fat version of a family favourite—beef stroganoff—tailored with the help of ChatGPT to fit my low-calorie, high-protein lifestyle.

This comforting dish is made with homegrown beef, frozen tomato purée from our summer harvest, and a few thoughtful swaps like Greek yoghurt instead of cream to keep it light, nourishing, and full of flavour. I serve it with a small scoop of shell pasta and some fresh salad greens for balance and fibre—simple, satisfying, and under 400 calories per serve.

Serves: 4
Calories per serve (with pasta and salad greens): ~380–400

Ingredients
• 300–400g homegrown beef, sliced thin
• 1 tsp olive oil
• 1 onion, finely chopped
• 2 cloves garlic, minced
• 1 cup mushrooms, sliced
• 3 cups homemade tomato purée (frozen flat in zip-lock bags)
• 3 tbsp smoked paprika
• ½ cup reserved pasta water
• 1 tsp salt
• ½ tsp white pepper
• ¼–⅓ cup Greek yoghurt (added off heat)
• Small scoop of cooked shell pasta per serve
• Handful of fresh salad greens per plate

🍳 Method
1. Sear the Beef
In a large non-stick pan, sear sliced beef in 1 tsp olive oil until just browned. Remove from the pan and set aside.
2. Sauté the Base
In the same pan, add onion, garlic, and mushrooms. Sauté gently to soak up the beefy flavours. Add a splash of pasta water and cover with a lid to steam and soften the vegetables.
3. Build the Sauce
Stir in 3 cups of homemade tomato purée and 3 tbsp smoked paprika. Let the sauce simmer gently for 5–10 minutes, stirring occasionally.
4. Season
Add 1 tsp salt and ½ tsp white pepper. Adjust to taste.
5. Return the Beef
Return the seared beef to the pan and allow it to simmer gently in the sauce for a few minutes until tender.
6. Finish with Greek Yoghurt
Turn off the heat. Stir in the Greek yoghurt to create a creamy, velvety finish. Don’t boil after adding yoghurt to avoid curdling.
7. Serve
Spoon a small amount of cooked shell pasta onto each plate, top with the stroganoff, and add a handful of fresh salad greens for balance and fibre.
