Beef Tikka Masala Written Recipe :
Ingredients :
-Undercut cut into 1-inch boti ½ kg
-For Marination:
-Ginger garlic 2 tbsp
-Lemon juice 2 tbsp
-Hung curd ½ cup
-Raw papaya 1 tbsp
-Brown onion 2 tbsp
-Allspice 1 tsp
-Salt 1 tsp
-Chili powder 1 tsp
-Tikka kabab masala 2 tbsp
Ingredients for Masala :
-Oil ¼ cup
-Mustard seeds ½ tsp
-Onion seeds ½ tsp
-Onion chopped 1 cup
-Tomatoes chopped 2
-Green chilies chopped 4
-Coconut milk ½ cup
-Salt ½ tsp
-Coriander leaves chopped 3 tbsp
-Mint 2 tbsp
-Allspice ½ tsp
-Chili powder ½ tsp
METHOD :
Marinate undercut pcs with all the given ingredients for 2 hours, put on skewers, bbq, bake or grill, give dum of coal.
METHOD FOR MASALA :
Heat oil, add mustard seeds and onion seeds with chopped onion, fry until onions turn light golden, add chopped tomatoes with salt, chili powder, fry till oil separates, add coconut milk stirring continuously till it boils, cook till gravy turns thick, at the time of serving fold in the beef tikkas to the masala, lastly add coriander, mint, green chilies and allspice, serve with nan.
KARHAI DAAL GOSHT Written Recipe :
Ingredients :
-Mutton boiled 750 gm
-Gram lentil boiled 2 cups
-Oil ½ cup
-Onion sliced 3
-Ginger garlic 2 tbsp
-Chili powder 3 tsp
-Allspice 1 tsp
-Turmeric ½ tsp
-Roasted & crushed coriander 2 tsp
-Tomatoes chopped 4
-Green chilies chopped 4
-Coriander leaves chopped 3 tbsp
-Cloves roast and grind 6
-Cinnamon stick roast and grind 1
-Black cardamom roast and grind 1s
METHOD :
Boil chana daal till just tender, fry roast the long, daal chini, elaichi and sabut coriander, grind to a coarse powder. Heat oil in a wok, fry onions until golden, add ginger garlic paste, fry for a min, add the boiled mutton, tomatoes, chili powder, salt and haldi, fry over medium heat for 15 mins, add in 1 cup water, boiled daal, green chilies, coriander leaves, allspice, leave it on dum for 10 mins, serve with paratha.
