How to make authentic Hyderabadi Dahi Vada — soft, flavourful lentil fritters soaked in creamy spiced yogurt and topped with a crunchy tempering. This delicious snack is perfect for **Iftar**, parties, or anytime you crave something tangy, spicy, and satisfying!
INGREDIENTS:
150g chickpea flour (besan)
¼ tsp red chili powder
½ tsp salt
Less than ¼ tsp turmeric powder
A pinch of baking soda
½ tsp ginger-garlic paste
Water as needed
Green Chutney
4 green chilies
4 garlic cloves
Handful of fresh coriander
Salt to taste
Yogurt Mix:
Fresh curd (whisked)
Water to adjust consistency
Salt to taste
Tempering (Tadka)
1 tsp cumin seeds
5 dry red chilies
Curry leaves (fresh or dried)
2–3 tbsp oil
📝 *STEP-BY-STEP INSTRUCTIONS:*
1️⃣ *Prepare the batter:*
Sieve chickpea flour to avoid lumps.
Add red chili powder, salt, turmeric, baking soda, and ginger-garlic paste.
Gradually add water and mix until the batter is neither too thick nor too thin.
Let it rest for 10 minutes.
2️⃣ *Make the chutney:*
Coarsely grind green chilies, garlic, and coriander without adding water.
Mix this chutney into whisked yogurt. Adjust salt and consistency.
3️⃣ *Fry the vadas:*
Heat oil on medium-low flame.
Drop spoonfuls of batter into the oil and fry until golden and crispy.
Drain and let them cool for a minute.
4️⃣ *Soak the vadas:*
Dip fried vadas in lightly salted water for 5 minutes.
Gently press to remove excess water and oil.
5️⃣ *Assemble:*
Place soaked vadas in the yogurt-chutney mixture.
Prepare tempering by heating oil and adding cumin, red chilies, and curry leaves.
Pour the hot tempering over the dahi vadas.
6️⃣ *Serve:*
Garnish with coriander or extra chili powder.
Enjoy immediately or chilled!
💡 **PRO TIPS:
Don’t over-soak the vadas — 5 minutes is enough to keep them soft but not mushy.
Adjust chili levels to your preference.
For a lighter version, bake or air-fry the vadas.
