Arugula and Microgreen Salad w/ Lemon Dressing! Oil-Free!

Описание: Arugula-Microgreen Salad W/ Lemon Dressing

For the Salad:

1 cup arugula
2 cups mixed greens
50g microgreens
¼ cup chopped green onion
¼ of a red pepper, sliced thinly
½ of a mango, diced
½ pint blueberries

For the Lemon Dressing:

¼ cup of walnuts
¼ cup lemon juice
1 clove of garlic
2 pitted medjool dates
1 tsp dijon mustard
1 tsp lemon zest
¼ tsp turmeric
Pinch of black pepper
¼ cup water

Directions

For the salad:

Combine all the chopped vegetables in a bowl.

For the dressing:

Combine all the ingredients in the blender. Blend until smooth. Add to salad. Enjoy!
