Healthy eating that tastes good is all about getting creative with flavors and textures! And this taco bowl has been on repeat for me. I've been swapping ground beef for @forceofnaturemeats ground bison because it's leaner, higher in protein, and loaded with essential nutrients like B vitamins, iron, and omega-3s!
Serving size: 2-3
Ingredients:
For the beef:
• 1lb of grass fed ground bison @forceofnaturemeats (or ground beef)
• 11/2 tbsp of tomato paste
• 1 tsp of chili powder, paprika, coconut sugar, garlic powder
• Salt and pepper taste
• 1/4 cup beef broth or chicken broth
For the pico de gallo:
• 1 roma tomato
• 1/3 cup white onion, chopped
• 1 jalapeno, remove seeds, diced
• 2 tbsp of chopped cilantro
• Juice of 1/2 lime
• Salt and pepper to taste
For the rice:
• 1 cup Indian basmati rice
• 1/4 cup chopped cilantro
• Juice of 1/2 lime
1 tosp olive oil
For the toppings:
• Avocado, sour cream, shredded cheddar cheese
Instructions:
1. Cook the rice according to the package instructions. Once cooked, fluff the rice with a fork and stir in lime juice and chopped cilantro. Drizzle 1 tbsp olive oil.
2. In a pan over medium high heat, cook the ground bison (or beef) until browned. Add the chili powder, paprika, garlic powder, coconut sugar, tomato paste, salt and pepper to taste and the beef broth. Stir to combine well. Simmer for 5 minutes until fully coated and thickened.
3. For the pico: Combine the diced tomatoes, onion, jalapeno and cilantro. Squeeze 1/2 lime and season with salt and pepper to taste.
Assemble your taco bowl:
1. Start by adding a base layer of cilantro lime rice to the bowl. Then add the ground beef, pico, sliced avocado, shredded cheese and sour cream.
