RECIPE:
This is a first for us, Vegan Spring Rolls. I usually make a version of these with mushrooms (which I don't have) and using lettuce (which I don't have) for the wraps, we are limited on supplies due to Covid19 so we are using what we have and thought the Spring Roll Rice Wrappers would be the perfect substitute. I will do another video on the lettuce wraps at a later date as they are my favorite!
In a sauce pan combine and mix all ingredients except tofu which will be put on top
1 cup of Beyond Meat Crumbles
1 bag Josie's Asian Chopped Salad-you can save the dressing and toppings for another day
1/4-1/2 cup diced organic water chestnuts
1/8 cup organic peanut butter
1/16 cup sambal sauce-less if you don't like it super spicy
1/16 cup organic 365 soy ginger sauce-(would normally make my own, but it's Covid19 cooking) so we use what we have.
1/8 cup crushed raw organic cashews
Carefully lay the West Soy Organic Firm Tofu tips on top of the mixture once it is cooked and completely stirred (7-10 minutes tops) and lay the tofu on top and put the cover on to heat them
dip Rice paper in warm water and put on plate, scoop in a spoonful of the mixture making sure to have one full Tofu strip and add a strip ofFresh avocado and roll
