This is honestly the best brownie I’ve ever had in my life, and today I’m so excited to share it with you! It’s rich, fudgy, sweet, and completely plant-based. Trust me, this is a must-try recipe, you won’t believe how good it is.
Ingredients
🍠 600 g sweet potatoes
🍠 130 g oat flour*
🍠 120 g agave syrup
🍠 50 g unsweetened cocoa powder
🍠 60 g sunflower oil
🍠 180 ml plant-based milk
🍠 6 g baking powder
🍠 a pinch of salt
🍠 zest of 1 orange
Method
Boil or steam the sweet potatoes for 20–30 minutes, until soft.
Blend them into a smooth puree, then add the liquid ingredients and mix well.
Fold in the dry ingredients and stir until fully combined.
Pour the batter into a baking tin and bake at 180 °C / 356 °F for 30–35 minutes.
Once baked, let the cake cool completely.
Melt dark chocolate in a double boiler and pour it over the top, or prepare a ganache by mixing 80 g melted dark chocolate with 40 g margarine and 50 ml plant-based milk over a double boiler.
Finish with grated orange zest and a pinch of flaky sea salt.
Refrigerate the cake for 2–3 hours before serving.
Storage
Store the brownie in an airtight container in the fridge for 4–5 days; this will keep it soft and moist. You can also freeze it whole or in individual portions: wrap each piece in plastic wrap and place in a freezer bag. To serve, thaw in the fridge or at room temperature.
