Easy vegan and gluten-free sourdough breakfast recipe without binders! Any sourdough starter will work: sourdough starter discard, cold or leftover active sourdough starter. Mix batter in the evening, ferment overnight in the fridge and enjoy pancakes or waffles in the morning.
In the video, you’ll see two versions of the same batter: high-fiber with ground flaxseed and store-bought aquafaba (liquid from canned chickpeas) and high-protein with chickpea flour and plant-based milk.
Gluten-Free and Gum-Free 50/50 Flour Blend gives you the freedom to simplify it and do half starch/half flour of your choice.

No Binder Sourdough Pancakes or Waffles Recipe (Vegan & Gluten Free)
Ingredients
200g gluten-free sourdough starter* or cold discard
120g Gluten Free 50/50 Flour Blend** (recipe below)
20g ground flaxseeds or 50g chickpea flour
100g aquafaba or plant-based milk
45g maple syrup
30g neutral oil
Pinch of salt
5g vanilla extract (optional)
Method
Mix flour blend and add all dry ingredients. Combine with all wet ingredients and mix well. Cover and keep the batter in the fridge overnight to ferment.
To fry pancakes - heat a non-stick pan with oil on medium-high and pour 1 tablespoon of batter per pancake. Cook for 1-2 minutes and flip. Cook the other side for 1-2 minutes and transfer on paper towel to absorb oil. Don’t overcrowd the pan, leave some space between pancakes to flip easily.
To make waffles – preheat the waffle maker and pour 2-3 tablespoons of batter per pancake. Cook for 2 minutes. Flip and continue cooking for 1-2 minutes for extra crispy waffle.
