Most of us don't cook eggplant at home, because the cookbook and YouTube recipes are overly complicated. It usually involves deep frying or frying with a lot of oil. And that is something home cooks, like us, do not do.
In this video, I'll show you an easier way to cook eggplant in garlic sauce that is just as tasty. And in a fraction of the time and effort
Ingredients:
400g eggplants
1 tsp Salt
1 Tbsp White vinegar
150g minced pork/chicken/beef
1 Tbsp/4 cloves garlic, minced or finely chopped
1 Tbsp ginger, minced or finely chopped
4 green onions, separated into white and green parts
2 Tbsp spicy bean paste (duo ban jiang)
Cornstarch slurry (2 tsp corn flour + 2 Tbsp water)
For the sauce:
2 Tbsp light soy sauce
2 Tbsp dark vinegar
1 Tbsp sugar
1/2 tsp salt
150 ml water
