Crispy, Buttery Mini Apple Pies 🍎 So Simple!
These Mini Apple Pies are crispy, buttery, and filled with warm cinnamon apples — the perfect quick dessert that tastes like fall! 🍂 So easy to make and ready in just 25 minutes.
Ingredients:
• 2 apples (peeled and chopped into small cubes)
• 40g salted butter
• 50g brown sugar
• 1–2 tsp cinnamon
• 1/4 tsp nutmeg
• (Optional) 2 tbsp lemon juice
• 1/2 tsp cornflour (cornstarch)
• 3 tsp cold water
• 2 sheets frozen shortcrust pastry
• 1 egg white (for sealing)
• 1 egg yolk+1 tbsp milk( for brushing )

Instructions:
1. Make the Apple Filling
• In a saucepan, add chopped apples, salted butter, brown sugar, cinnamon, nutmeg, and (optional) lemon juice.
• Simmer over medium heat until the apples soften.
2. Thicken the Mixture
• Mix cornflour and cold water in a small bowl.
• Pour into the apple mixture and stir until it thickens.
• Set aside to cool.
3. Prepare the Pastry
• Preheat oven to 180°C (350°F).
• Use a round cookie cutter or glass to cut out 8 pastry circles from one pastry sheet.
• Use leftover pastry (or the second sheet if needed) to cut thin strips for the tops.
4. Assemble the Mini Pies
• Place about 1 tablespoon of apple filling in the center of each pastry circle.
• Brush the pastry edges with egg white to help seal.
• Lay 2 strips of pastry on top, then 2 more perpendicular on top (no need for full lattice).
• Press edges gently with a fork to seal.
5. Bake
• Brush the tops with egg yolk+1 tbsp milk.
• Bake at 180°C (350°F) for 20–25 minutes or until golden brown.
