This recipe is slightly different than usual. The combination of mustard and caster sugar gives you a completely different piece of fish than you are used to. Super cool and easy to make once.

🌡️ 180 degrees (on a smoking board)
🐟 Salmon fillet with skin from @bbqualityslagerij

Ingredients for 3 people:
500 grams of salmon
2 tbsp mustard
2 tbsp dark caster sugar
Fresh dill
Pepper and salt
Smoking board
Recipe:
• Soak the smoking board in water about an hour in advance
• Prepare the barbecue for immediate cooking at 180 degrees
• Sprinkle a little salt and pepper on the salmon
• Spread the salmon with a nice layer of mustard
• Sprinkle the caster sugar over this
• Place your salmon on the smoking board and place it in the kamado.
• The salmon is ready when it reaches 48 degrees. Then it is beautifully rosé. For salmon that has been cooked further, you can use 55 degrees. About 12 to 15 minutes.
