Can't afford a real Hammond B3? Nobody can. Find an old home organ with MIDI, then add iPad!
This old organ outputs 3 channels of MIDI where setting it up to play logically relative the pedals and manuals is easy. Each manual and pedals is a channel, the app is already set up to accept MIDI input that way. A cheap organ off Craigslist make the app much more like playing a real Hammond.
