If you want to try something exclusive than the usual Pav bhajis, you can try the Rajma Masala Pav, mix of rajma and veggies with a perfect spice blend is a delight to the taste buds.
RAJMA MASALA PAV
Ingredients
2 tbsps butter + for applying
2 tsps oil
1 large onion, finely chopped
1 tbsp ginger-garlic paste
½ tsp green chilli paste
1 large tomato, chopped
1½ cups fresh tomato puree
1 cup kidney beans (rajma), soaked and boiled
1½ tbsps Tata Sampann Pav Bhaji Masala
Salt to taste
¼ cup fresh green peas
1 medium carrot, peeled
1 medium capsicum, finely chopped
½ lemon
2 pavs
Roughly chopped onion for topping
Roughly chopped cucumber for topping
Lemon wedges to serve
Coriander sprigs for garnish
Method
1. Heat butter and oil in a non-stick shallow pan, add onion and sauté till translucent.
2. Add ginger-garlic paste, green chilli paste and sauté well. Cook till the raw smell goes away.
3. Add tomato and tomato puree, mix well and cook till the mixture is pulpy.
4. Add rajma and mix well. Add Tata Sampann Pav Bhaji Masala, salt and mix well.
5. Add rajma water and mix well. Add green peas and mix well.
6. Grate carrot directly into the pan and mix till well combined. Add capsicum and mix well.
7. Mash the mixture using a masher. Cook for 1-2 minutes and switch the heat off. Squeeze lemon and mix well. Set aside.
8. Heat a grill pan, meanwhile slice pavs in half midway. Apply butter on them.
9. Place them on the grill pan with the butter side down. Cook till the base is crisp, apply butter on to and flip.
10. Apply a portion of the prepared mixture on each slice of pav and apply it evenly. Press it slightly and cook till the base is crisp.
11. Flip again and cook for a few seconds. Take it off the heat and transfer on a serving plate.
12. Sprinkle a little roughly chopped onion, cucumber roughly chopped and garnish with coriander sprigs. Serve hot with lemon wedges.
