I'm looking forward to our sunchoke harvest this fall. These plants seem to produce no matter how negligent I get with my garden. I'm growing these because unlike potatoes which are very starchy(glucose based), these tubers contain inulin (fructose based). Inulin acts as a pre biotic but and it doesn't spike insulin like starches tend to do. I'm looking forward to adding them to my diet.
I've struggled with obesity since before I was a teenager. I've tried so many diets, and I know the frustration of yo-yo dieting. I'd like to share how I've managed to lose almost 100 pounds and keep it off for the past 2 years. I hope this will help others bypass some of the frustration they've experienced in the past.
